Winter is here and it’s time for comfort foods to keep you warm and to chase away the cold-weather blues. At this time of the year, we relish hot, wholesome, satisfying meals. Cooking these on our LPG gas stoves will spread some warmth across our homes too. 

Here are 3 winter recipes to tantalise your taste buds….

Easy Beef Stew

Here’s a delicious and nutritious beef stew for the whole family to enjoy.

Ingredients 

  • 2 tablespoons butter
  • 1 onion, chopped or diced
  • 2 garlic cloves, crushed
  • fresh thyme, 3 stalks or 1/2 tsp dried thyme
  • 500g beef, cubed
  • 1 tablespoon flour
  • 2 tablespoons tomato paste
  • 1 large sweet potato
  • 3 carrots, chopped
  • 2 cups chicken stock
  • 1/2 teaspoon salt

Method

  1. On medium heat and in a medium-sized pot, fry the onion in the butter until soft.
  2. Add the garlic and thyme and cook for one minute.
  3. Dust the meat in the flour and then add to the pot and brown the meat.
  4. Add the tomato paste, sweet potato, carrots, chicken stock and salt.
  5. Put the lid on the pot and allow it to simmer on low heat for 90 minutes (you can extend it to 120 minutes to increase the tenderness of the meat).
  6. Take the lid off and set the heat to medium and allow to boil for 5 minutes uncovered to reduce the liquid and thicken the stew.
  7. Serve with rice, mash potato or pasta or seasonal vegetables.

Winter Vegetable Casserole

This is a tasty but quick and easy nourishing recipe.

Ingredients 

  • 2 onions, each cut into 6 wedges
  • 3 carrots, cut into chunks
  • 3 celery sticks, cut into chunks
  • 400g sweet potato, cut into chunks
  • 1 litre hot vegetable stock, preferably home-made
  • 2 garlic cloves, finely chopped
  • 3 leeks, about 300g in total, thickly sliced
  • 150g pearl barley
  • 2 tsp dried sage
  • salt and pepper
  • 3 tbsp coarsely chopped, fresh, flat-leaf parsley to garnish

Method

  1. Preheat the oven to 180ºC / Gas mark 4. 
  2. Put the onions, carrots, celery and sweet potato into a large pot.
  3. Pour in the stock and bring to the boil.
  4. Add the garlic, leeks, pearl barley, sage and seasoning. 
  5. Stir to mix the vegetables together. 
  6. Transfer into a casserole dish.
  7. Cover and cook in the oven for about 1 hour or until the vegetables are just soft and the barley is tender.
  8. Sprinkle with the parsley and serve with thick slices of bread.

 

Tip: The casserole can be simmered gently on the hob for 45–50 minutes, instead of cooking in the oven. Stir occasionally.

Minestrone Soup

This classic Italian soup is perfect for cold days with chunky slices of garlic bread.

Ingredients 

  • 2 onions, finely chopped
  • 3 carrots, chopped
  • 3 sticks celery, chopped
  • 2 large potatoes, chopped into squares
  • 2 garlic cloves, crushed
  • 1 cup green beans, chopped
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1½ litres water
  • 1 cube beef stock
  • 1 cube vegetable stock
  • 2 tins peeled, chopped tomatoes
  • 1 tin cannellini beans
  • 100g spaghetti
  • salt and pepper, to taste
  • parmesan cheese, grated for garnish

Method

  1. Heat the oil and butter in a large pot, add onions and cook till soft and golden brown.
  2. Add the carrots, celery, potatoes, garlic, green beans and tomatoes. Cook for 2-3 minutes.
  3. Add the water and stock cubes.
  4. Bring to the boil, then reduce the heat and let it simmer semi-covered for 1-1½ hours. The soup should be fairly thick at this point. If not, leave the lid off and simmer for a further 15 minutes.
  5. Add the beans and spaghetti, season with salt and pepper and bring to the boil for approximately 15 minutes.
  6. Serve with chunky slices of garlic or fresh bread and a little grated parmesan.
